BakingUCrazy: Caramel Apple Cheesecake Bars!

HEY GUYS

It's baking time!

Another one of my favorite autumn/fall time recipes that I recently discovered here, while browsing the net. They are honestly too good not to share!
I've already made them twice and they are soo addictive!

Watch tutorial here!

Ingredients!
    BOTTOM LAYER
1 cup plain flour
1/4 cup light brown sugar
1/2 cup butter( make sure it is soft!)
MIDDLE LAYER
1 (8 oz) block cream cheese, room temperature( I used Philadelphia)
1 tsp vanilla
1/4 cup granulated sugar
1 egg
2 small Granny Smith apple, peeled and small diced
1/2 tsp pumpkin pie spice ( how to make the mix, click here)
TOP LAYER
1/2 cup packed light brown sugar
1/2 cup flour
1/4 cup old fashioned oats
1/4 cup butter, room temperature
Caramel/toffee sauce

How to make?
  1. Wash you hands( obv!)
  2. Set your oven to 180cUse some foil to line a baking tray of your choice. My tray was 8x8 and quite deep.
  3. Mix all the bottom layer ingredients (flour, brown sugar and butter) in a bowl. You can use your fingers to make crumbs, by a fork gives a better result!
  4. Transfer the layer into your tray and press firmly; then bake for 12-14 minutes until browned.
  5. While you wait, weigh out your cream cheese and then mix that with the vanilla extract, egg, pumpkin spice mix and 1/4 cup granulated sugar; then beat it!
  6. Skin and dice the apples and sprinkle with sugar and  pumpkin pie spice. Coat your apples evenly.
  7. In a separte bowl, mix all your top layer ingredients( light brown sugar, flour, oats and butter) with a fork.
  8. After 12 minutes, take your layer out of the oven.
  9. Spread the middle layer on top and then add the diced apples and then the top layer.
  10. Drizzle caramel/toffee sauce all over the top.
  11. Put back in oven and bake for about 30 minutes ( watch out for burning).
  12. Place on a wire rack  to cool for at least 30 minutes and then place in fridge overnight.
  13. In the morning, cut your goodies into even squares an dlayer on a plate.
OPTIONAL: You can add more toffee/caramel sauce if you want
You are done!
